We have had outstanding success in a wide variety of markets, both Hispanic and mainstream, from corner carnicerías to national chains to high end restaurants and gourmet shops.

The reasons for this are various. Our cheeses are made with the personal, daily supervision of Mrs. Castro, who learned to make cheese on her father’s farm in Cárdenas, San Luis Potosí, México. They are made from the highest quality ingredients available. They are not mass-produced industrial or commodity cheeses. Since they are made to order, they are the freshest available cheeses of their kind. They have a high-quality, homemade, authentic, hand-wrapped presentation. They are all natural and also suitable for vegetarian diets. Most importantly of all, “La Vaquita” cheeses are delicious!

We’ve come a long way since Mrs. Castro turned those first gallons of milk into her delicious Queso Fresco. Our newest manufacturing facilities were built in 1995 and updated in 1999 and 2001. We are continually improving our equipment and facilities. And "La Vaquita" products are still made and will continue to be made with the same personal attention and dedication to quality, cleanliness, and flavor that we have always maintained.

The "La Vaquita" quesos and cremas that our customers serve their families and friends were made in a modern manufacturing facility, but "La Vaquita’s" quality and delicious flavor continue traditions handed down through generations of Mexican homestead cheesemakers. Many, many customers who come from all over Latin America have told us that this cheese tastes "just like the cheese we ate back home". We agree and we think our abuela would be proud!
