These cheeses DON’T MELT. That’s why they make the perfect frying cheese. When fried, the cheese turns a beautiful golden brown with just a bare hint of crunch on the outside and soft and delicious on the inside. ¡Qué delicia!

Ingredients:
1 – 16 oz. pkg. La Vaquita Cuajada en Terron (chunky cheese)
OR 1 – 16 oz. pkg. La Vaquita Queso Fresco, cut into cubes
canola oil for frying

Preparation:
Heat about 2 tablespoons of oil in in a large skillet. Add cheese and cook until golden brown (about 2 minutes on each side). Turn with a spatula or kitchen tongs. Do not overstir.

Serve immediately.

Serving Suggestions / Ideas:
• This recipe is best served right out of the skillet, so have some warm corn tortillas and your favorite salsa or pico de gallo ready to go. As soon as the cheese is ready, place some of the cubes in your corn tortilla and top with the salsa. Use homemade salsa if possible, it really does make a difference! We love the salsa recipes in Rick Bayless’ cookbooks.
