Have you ever sat in traffic
on the way home wondering what in the world you
were going to fix for dinner? Here's a fast and
easy, delicious and nutritous way to please your
family without spending all evening in the kitchen.
Kids love these!
This is also a great party food.
Just prepare all the ingredients ahead of time
and store in separate containers. Let your guests
assemble their own tostadas.
1 dozen tostada shells
1 cup refried beans (we like Sierra brand
black refried beans)
1 cooked chicken breast shredded. Or substitute
1 lb. ground beef, browned, drained, and
seasoned.
Shredded lettuce or cabbage
1 tomato, diced or thinly sliced
1 medium onion, sliced
1 avocado, sliced
"La Vaquita" Queso Fresco, crumbled
- or -
"La Vaquita"
Cuajada Fresca, crumbled
On each tostada shell,
spread a thin layer of refried beans. Add
chicken or ground beef. Top each tostada
with shredded lettuce or cabbage, tomato,
onion, and avocado. Drizzle with the Crema
Mexicana or Crema Salvadoreña
and top generously with crumbled Queso Fresco.
Serve with pickled jalapeño
or serrano peppers or a spicy Mexican salsa.
