Makes 12 Gorditas
4-6 servings

Ingredients:
3 cups masa harina for tortillas (like Maseca brand)
3 cups water, approx.
6-8 oz chorizo (Mexican sausage)
16 oz or 1 can refried pinto or black beans (we like La Sierra brand refried black beans)
8 oz. pkg. La Vaquita Queso Fresco, crumbled
8 oz. bottle La Vaquita Crema Mexicana or 8 oz. bag La Vaquita Crema Salvadoreña

Preparation:
(1) Masa
Mix the masa harina and the water (a bit at a time) together to form the masa. The masa should feel moist yet not sticky. Divide evenly and roll between your hands into twelve plum size balls. Place a ball between two pieces of wax paper or plastic wrap and apply gentle pressure with a flat dish or plate to make rounds that are approx. 1/4” thick and 5” in diameter. Set each shaped piece aside onto parchment or wax paper.

(2) Chorizo / bean filling
Heat 1 teaspoon oil in a skillet or high-sided pan. Add chorizo and cook over medium heat for 5 – 7 minutes, crumbling the chorizo in the pan. Add in the refried beans plus 1/4 cup water. Mix thoroughly and cook until it boils slightly. Remove from the heat and keep warm.

(3) Gorditas - Assembly
Heat about 2 cups of oil in a large high-sided pan to about 375û F degrees. Carefully place the masa rounds in the oil 2-3 at a time. Fry for about 3 – 4 minutes on each side, until golden brown in color. Remove the rounds with tongs and drain on paper towels.

Spread warm chorizo / bean mixture atop the still warm puffed masa rounds. Add a generous sprinkling of crumbled La Vaquita Queso Fresco. Drizzle with La Vaquita Crema Mexicana or La Vaquita Crema Salvadoreña.

Serve immediately.

Serving Suggestions / Ideas:
• Put a dab of salsa picante on each gordita before drizzling on the crema or serve pickled serrano peppers alongside.
• Top with thinly sliced avocado.
For the calorie conscious: instead of frying the Gorditas, cook the masa rounds on a non-stick skillet or griddle. Place them on the griddle for approx. one minute, flip and cook the other side for approx. two minutes, and flip once more to the first side for an additional two minutes.
• For a slightly sharper Queso flavor, substitute crumbled "La Vaquita" Cuajada Fresca or "La Vaquita" Queso Fresco Salvadoreño Estilo Campesino for the "La Vaquita" Queso Fresco.
