
Makes 12 Entomatadas
3-4 servings
Ingredients:
3 med to large ripe tomatoes
1/3 cup chicken stock or chicken broth
1/4 medium white onion sliced thinly
1 dozen corn tortillas
8 oz. pkg. La Vaquita Queso Fresco, crumbled
1/8 medium onion, finely diced and mixed
with the cheese (optional)
canola or vegetable oil as needed for frying
Salt to taste
Preparation:
(1) Tomato Sauce
Place stemmed tomatoes into a pot of boiling
water for approx. 1 2 minutes. Allow
to cool and remove the skins. Place the
tomatoes into a blender and add 1/3 cup
of chicken stock or broth. Blend well.
Heat 1 tablespoon of oil in a sauté
pan. Add the sliced onions and fry for about
1 minute. Carefully add the tomatoe mixture
to the pan. Let simmer for about 10
12 minutes or until it coats the back of
a spoon. Season with salt to taste. Remove
from heat.
(2) Entomatadas
Heat oil in a large sauté pan to
roughly 350F degrees. Slightly crisp tortillas
in oil for 30 45 seconds (do not
let tortillas become too crunchy; they must
remain pliable). Drain on paper towels.
Dredge a fried tortilla into the warm tomato
sauce. Spoon 1 2 tablespoons of the
"La Vaquita" Queso Fresco down
the center. Roll the tortilla to close and
place on a serving platter. Repeat with
the remaining tortillas.
Spoon any remaining tomato sauce and sprinkle
any remaining Queso Fresco over the assembled
entomatadas on the platter. Serve immediately.
Serving Suggestions / Ideas:
The sauce can be made a day ahead
and warmed before using.
Serve warm with refried beans and
avocado slices. The entomatadas are also
delicious served for a weekend brunch with
slices of seared cecina or with scrambled
eggs.
If you like a more "picante"
taste, boil and blend one or two stemmed
serrano peppers along with the tomatoes
when making the sauce.
For the calorie conscious: instead
of frying, soften the tortillas by warming
briefly on a griddle or in the microwave
before dredging in the tomato sauce.
For a slightly sharper Queso flavor,
substitute crumbled "La Vaquita"
Cuajada Fresca or "La Vaquita"
Queso Fresco Salvadoreño Estilo Campesino
for the "La Vaquita" Queso Fresco.
