Heat a griddle (or heavy skillet) over medium-high heat. Lay on flour tortillas and warm briefly on each side (to soften). Place 2 - 3 slices of La Vaquita Queso Quesadilla or Queso Botanero con Jalapenos on 1/2 of each tortilla. Fold the tortillas in half. Cook until the quesadillas are crispy and golden brown, flipping occasionally. Remove from griddle. The cheese will be melted and hot.

Add one or more of these optional fillings when you add the cheese: fresh or pickled jalapeño slices, fried onions, roasted peppers, beef or chicken (fajitas), chopped steak, slivered ham, shrimp, flaked fish.

After removing the Quesadilla from the griddle, finish with one or more optional toppings: sliced ripe olives, sliced green onion, thinly sliced red onions, pico de gallo, guacamole or chopped avocado, sour cream, lettuce and tomato, shredded cabbage, salsa.

You can also use sliced Queso Fresco in this recipe. The only difference: the cheese will get very soft, but won't melt. Either way... delicious!!
