Prepare 1 dozen frozen flautas or "taquitos" (available in most supermarkets) according to package directions, or make your own (recipe below).

Arrange the flautas on a large platter. Top with shredded lettuce, thinly sliced tomato, sliced onion, and sliced avocado.

Add plenty of crumbled "La Vaquita" Queso Fresco and drizzle with "La Vaquita" Crema Mexicana. Serve with Mexican rice and refried beans.

Homemade Flautas:
1 cup cooked, shredded chicken
- OR - 1 cup browned, seasoned ground beef (or picadillo)
- OR - 2 medium potatoes, peeled and boiled in salted water, drained, and mashed
- OR - 1 cup coarsely crumbled or thickly sliced "La Vaquita" Queso Fresco

12 corn tortillas, warmed

Spoon 1 Tablespoon of filling across the center of each tortilla. Roll tightly and secure with a wooden toothpick. Heat 1 inch vegetable oil to 350°F. Fry flautas, turning once. Drain on paper towels.
