In
1971, María Castro, newly immigrated from
the state of San Luis Potosí, México
and mother of three young daughters, began making
Queso Fresco for her family in the kitchen of
her Houston, Texas home, modifying an old recipe
she had learned from her mother on their family's
Mexico farm. Word soon spread among friends and
neighbors about the authenticity and quality of
her cheese and requests for it began to trickle
in. That trickle soon turned into a deluge.
Houston's Hispanic population continued
to grow and as more and more Hispanics looking for the
familiar products of their native lands discovered Mrs.
Castro's cheese, her business grew as well. The family's
garage was remodeled into a mini-factory to accommodate
the demand for fresh Mexican cheese. Soon this site
was outgrown. The family sold their home and purchased
and renovated a run-down warehouse to house the growing
cheese production. Castro Cheese Co., Inc. was incorporated
in October 1977 and continued to produce the "La
Vaquita" brand of Hispanic cheeses.
Today, "La Vaquita" cheeses
are produced in our new, modern manufacturing facilities.
We have, as well, expanded our product line adding various
new cheeses and creams. And Castro Cheese Co. is still
family owned and operated. We are now, as always, dedicated
to the quality and flavor of our original recipe.
Distribution has spread throughout
Texas and into other states. "La Vaquita"
products are now sold across a wide variety of
markets, from corner carnicerías to national
chains, from neighborhood taquerías to
world class hotels and restaurants.
We are proud of our heritage. And
excited about our future. Our vibrant management team,
together with a dedicated, hard working staff take pride
in producing the most authentic, highest quality, best
tasting Hispanic dairy products available.
